Join the Fourth of July festivities by making these gluten-free and dairy-free red velvet cupcakes.  This all-American dessert has been adapted to suit anyone's dietary restrictions.  This version of red velvet is light and absolutely delicious.
Red Velvet Cupcakes Recipes
Ingredients:

2 1/2 cups gluten-free cake flour
3 tablespoons unsweetened cocoa powder
1 teaspoon salt
1 cup white sugar
1/8 cup light agave syrup
1 1/2 cups canola oil
2 large eggs at room temperature
3/4 teaspoon red gel/paste food coloring
1 teaspoon vanilla extract
2 rounded tablespoons Tofutti “cream cheese” almond or soy milk (directions below)
2 tablespoons 1 plus tsp distilled white vinegar, separated
1 1/2 teaspoons baking soda

Preparation      1. Preheat oven to 425°.     2. Place sweet potatoes in a shallow baking pan lined with foil. Bake at 425° for 1 hour or until tender. Reduce oven temperature to 350°.     3. Peel sweet potatoes; place in a large bowl. Add butter and next 3 ingredients (through cinnamon); mash with a potato masher until pureed. Spoon potato mixture into a 2-quart glass or ceramic baking dish coated with cooking spray.     4. Bake at 350° for 10 minutes. Top with marshmallows; bake an additional 10 minutes or until marshmallows are lightly browned.

    4 1/4 pounds sweet potatoes
    2 tablespoons butter $
    1/2 teaspoon kosher salt
    1/2 teaspoon ground ginger
    1/2 teaspoon ground cinnamon
    Cooking spray $
    3 cups miniature marshmallows

First let’s make the cake. In a bowl beat the eggs with the sugar and the vanilla extract until it double the size. Add the flour gradually and beat for 5 minutes more until we have smooth dough. Preheat the oven at 350º divide the dough in 2 round molds and bake for 20 -25 minutes. (If you don’t have a round molds, you can cut the cake once done using a plate). Now let’s move on the cheese frosting. mix the cheese with the icing sugar and vanilla extract, beat until a smooth mixture. divide it into 2 parts, add the strawberries pieces in one part and leave the other for the decoration.
